When Life Gives You...

6 eggs in a pan, cracked open by your 3-yr old before you dragged yourself out of bed--make German Pancakes.(I tried to not look TOO impressed that she successfully cracked open 6 eggs, put them into the pan without spilling more than a drop or two, and threw the shells in the garbage! I also tried to convince her to always ASK before she gets eggs out.) BTW, the german pancakes were a huge hit. Everyone ate theirs, and Chick had about 4 servings!

Yummy. My sister makes them with coconut (which my kids then reject, but I love).

Custard or bread pudding is another good one for masses of eggs.

You are such a great, encouraging Mom! We love these at our house. I grew up calling them "popeye pancakes", so that is what my kids call them, too.

Good job!! I think I would have just gotten angry or made something lame like scrambled eggs, lol. Share the recipe, please. It looks yummy!

That is impressive, though. I don't think Zoe has ever attempted to crack an egg......

We love German pancakes here, too. I can't get them to not deflate, though. How do yours do?

Mine deflate too, but I like them dense, so I don't mind it.

Katie, the recipe is:
GERMAN PANCAKES

1 tablespoon butter
1/2 cup milk
1/2 cup flour
3 eggs
(I just saw a recipe online that also calls for a dash of salt and a dash of cinnamon)

1. Preheat oven to 425 degrees. While oven is preheating, melt 1 tablespoon butter in 9-inch square pan by putting it in the preheating oven.
2. In large bowl, beat together all other ingredients.
3. Pour batter into 9-inch square pan that has the melted butter. Put it back in the oven.
4. Bake for 12-15 minutes.
5. Serve with powdered sugar & lemon juice or syrup.

Oh this has really put a smile on my face today, my little boy gets the cartons out of the fridge and will sit down and count the eggs.
